Spinach Pesto

Pestooooo.

This is a different pesto recipe to my other one. I used it in the Galette (recipe coming soon) and decided to put the recipe up.

Based on Top With Cinnamon's Herby Kale Pesto.


You need:

1 lemon

1 garlic clove, crushed

100g spinach, cleaned and dried

4 tbsp olive oil

2 tbsp Parmesan, grated

A pinch of salt


Grate the zest of a lemon. Juice half of the lemon and place the juice and the zest in a blender. Add all of the other ingredients and blend until a paste like thing is formed.
